Spicy shrimp and veggie stew with a Louisiana twist - a flavorful delight!
Ingredients:
  • 1 cup chopped onion
  • 0.5 cup chopped celery
  • 0.5 cup chopped bell pepper
  • 6 cloves garlic, minced
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 1 (6.5 ounce) can tomato sauce
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 bay leaves
  • 0.5 cup all-purpose flour
  • 1 pinch salt and ground black pepper to taste
  • 1 pound peeled and deveined medium shrimp
  • 0.5 cup tomato juice
Instructions:
  • In a Dutch oven or heavy pot, heat oil over medium heat. Sauté onion, celery, bell pepper, and garlic until softened, about 5-7 minutes. Stir in diced tomatoes, green chiles, tomato sauce, sugar, 1 teaspoon salt, 1/2 teaspoon black pepper, and bay leaves. Reduce heat to medium-low and simmer until vegetables are tender, approximately 30 minutes.
  • Place the flour in a large sealable plastic bag and season it with salt and pepper. Add the shrimp to the bag, seal it, and shake to evenly coat the shrimp with the seasoned flour.
  • Gently fold in tomato juice into the Dutch oven. Simmer on low until the juice thickens slightly, approximately 5 minutes. Add shrimp and cook until they are pink, about 5 minutes. Take the Dutch oven off the heat and allow the remaining heat to finish cooking the shrimp until they turn bright pink and opaque, around 5 minutes.
