Impress with baked lemon-poppy seed rolls filled with raspberry jam and a zesty lemon glaze.
Ingredients:
  • 0.75 cup milk
  • 1 large egg
  • 1 large egg yolk
  • 2 tablespoons lemon juice
  • 2 tablespoons white sugar
  • 1 tablespoon poppy seeds
  • 1 lemon, zested
  • 2 teaspoons active dry yeast
  • 2 cups all-purpose flour, or more as needed
  • 0.25 cup unsalted butter, at room temperature
  • 1.25 teaspoons salt
  • 0.5 cup seedless raspberry jam
  • 0.5 cup confectioners' sugar
  • 0.5 tablespoon milk
  • 0.5 tablespoon lemon juice
  • 0.25 teaspoon vanilla extract
Instructions:
  • In a large bowl, mix together milk, egg, egg yolk, lemon juice, sugar, poppy seeds, lemon zest, and yeast. Add 2 cups of flour, butter, and salt. Gradually incorporate more flour until the dough pulls away from the sides of the bowl.
  • Transfer the dough to a floured surface and knead until smooth and elastic, incorporating additional flour as needed. Place the dough in a lightly greased bowl, cover, and let it rise until doubled in size, approximately 1 hour.
  • After letting the dough settle, shape it into a 12x10-inch rectangle. Evenly spread raspberry jam, leaving a small border. Roll the dough from the long side, sealing it like a jelly roll. Cut the log into 12 slices, then arrange them cut-side down in a greased 8x8-inch square pan. Cover and allow to rise for 40 to 45 minutes until puffy.
  • Preheat the oven to 350°F (175°C) in the meantime.
  • Bake in the center of the preheated oven for approximately 30 minutes, or until lightly browned on top.
  • Prepare a delicious glaze by mixing confectioners' sugar, milk, lemon juice, and vanilla extract in a bowl. Pour over the warm rolls for a delectable finishing touch.
