Everyone can savor a delectable pasta dish, inclusive of all diets!
Ingredients:
  • 375g dried wholemeal penne pasta
  • Olive oil cooking spray
  • 125g 97% fat-free shaved leg ham, thinly sliced
  • 4 green onions, thinly sliced
  • 400g button mushrooms, thinly sliced
  • 3 garlic cloves, crushed
  • 62.50 gm dry white wine
  • 125.00 ml light cream for cooking
  • 185ml can light and creamy evaporated milk
  • 127.50 gm salt reduced chicken style liquid stock
  • 10.00 gm cornflour
  • 125.00 ml fresh flat-leaf parsley leaves, chopped
Instructions:
  • Boil pasta in a large pot of salted water according to package instructions until al dente. Drain cooked pasta.
  • In a large, deep non-stick frying pan over medium-high heat, spray oil and cook ham for 2 minutes until golden. Add onion, mushroom, and garlic, and cook for an additional 3 to 4 minutes until the mushroom has softened, stirring occasionally.
  • Pour in the wine and let it simmer for 2 minutes until it reduces by half. Stir in cream, milk, and chicken stock. Bring it to a boil, then lower the heat to medium and simmer for 2 to 3 minutes until the sauce thickens slightly. Combine cornflour and cold water until smooth, then add it to the cream mixture. Cook and stir for 3 to 5 minutes until the sauce thickens. Season with salt and pepper, then add pasta and parsley, mixing well. Serve and enjoy!
