Tropical coconut and a hint of sugar elevate low-fat yogurt muffins.
Ingredients:
  • cooking spray
  • 2 cups all-purpose flour
  • 0.33333334326744 cup white sugar
  • 0.25 cup sweetened flaked coconut
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 1 (8 ounce) container low-fat vanilla yogurt
  • 1 large egg, lightly beaten
  • 1 large egg white, lightly beaten
  • 0.25 cup vegetable oil
  • 0.25 teaspoon coconut extract
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously coat 12 muffin cups with cooking spray.
  • In a large bowl, combine flour, sugar, coconut, baking powder, and salt. Create a well in the center. In a separate bowl, whisk together yogurt, egg, egg white, vegetable oil, and coconut extract until well mixed. Pour the egg mixture into the well of the dry ingredients and stir until just combined. Fill prepared muffin cups 3/4 full with batter.
  • Bake in the preheated oven until golden brown, approximately 20 minutes. Then, take the muffins out of the pan right away.
