Diabetic-friendly pie with no aftertaste.
Ingredients:
  • 1 (9 inch) pie shell
  • 1 egg
  • 6 packets granulated artificial sweetener
  • 1 teaspoon pumpkin pie spice
  • 1 cup pumpkin puree
  • 1 cup evaporated milk
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • In a medium bowl, combine egg, sugar substitute, and pumpkin pie spice, whisk until fully incorporated. Mix in pumpkin and milk until smooth. Pour the mixture into the pie shell.
  • Place the pie on a baking sheet and bake in a preheated oven until the center is set, approximately 30 minutes.
