Sugarless pumpkin seed granola sweetened with sugar-free maple syrup. Perfect for special diets!
Ingredients:
  • 1 cup raw pumpkin seeds
  • 1.5 cups rolled oats
  • 0.5 cup pumpkin puree
  • 0.5 cup sugar-free maple-flavored syrup
  • 0.25 cup shredded coconut
  • 2 tablespoons unsalted butter, melted
  • 0.5 teaspoon pumpkin pie spice
  • 0.25 teaspoon salt
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • Combine pumpkin seeds, oats, pumpkin puree, maple syrup, coconut, butter, pumpkin pie spice, cinnamon, and salt in a bowl, ensuring everything is thoroughly mixed. Spread the mixture evenly on the baking sheet.
  • Bake in the preheated oven, stirring every 15 minutes, until crispy, 30 to 45 minutes.
