Easy and delicious roast lamb with veggies - perfect for a healthy family meal with only six ingredients.
Ingredients:
  • 46.80 gm Dijon mustard
  • 16.00 gm brown sugar
  • 2 300g Trim Lamb round roasts
  • 650g (about 3 small) orange sweet potatoes (kumara), cut diagonally into 2cm-thick pieces
  • 350g green beans, trimmed, washed
  • 40.00 ml finely chopped fresh continental parsley
Instructions:
  • Preheat your oven to a toasty 220°C and line a baking tray with non-stick baking paper.
  • Mix the mustard and brown sugar in a small bowl and generously brush the roasts with the flavorful mixture. Transfer the roasts onto the prepared baking tray.
  • Roast in a cozy oven for 25 minutes until it reaches a perfect medium or your desired doneness. Gently cover with foil and let it rest for 5 minutes.
  • While the sweet potatoes are steaming over a large saucepan of boiling water for 10 minutes, add the beans and continue steaming for another 5 minutes until the vegetables are tender. Mix in the parsley with the beans, then set aside the beans and potatoes to keep warm.
  • Arrange the sliced lamb on serving plates, generously drizzle with the cooking juices, and serve with the sweet potatoes and beans.
