Grilled lamb loin chops marinated in garlic, rosemary, and Dijon for a flavorful weeknight meal.
Ingredients:
  • 0.5 cup olive oil
  • 0.25 cup red wine vinegar
  • 2.5 tablespoons minced fresh rosemary
  • 0.75 medium lemon, juiced
  • 6 cloves garlic, minced
  • 0.75 teaspoon Dijon mustard
  • salt to taste
  • 4 (4 ounce) Lamb, Australian, imported, fresh, leg, sirloin chops, boneless, separable lean and fat, trimmed to 1/8" fat, raw
Instructions:
  • In a large glass or ceramic bowl, combine olive oil, vinegar, rosemary, lemon juice, garlic, mustard, and salt, whisking until well incorporated. Add the chops and mix well to ensure they are evenly coated. Cover the bowl with plastic wrap and refrigerate for 2 to 4 hours, or overnight to marinate.
  • Prepare the outdoor grill by preheating it to a medium-high heat and lightly oiling the grate.
  • Remove the chops from the marinade, shake off the excess, and discard the leftover marinade.
  • Grill chops until they reach an internal temperature of at least 135 degrees F (57 degrees C), about 5 to 7 minutes per side.
