Rosemary and garlic lamb chops recipe

Whip up a quick and delicious meal of savory rosemary garlic lamb chops and colorful grilled veggies.
Ingredients:
  • 42.00 gm orange juice
  • 40.00 ml Brand Italian red wine vinegar
  • 2 cloves garlic, crushed
  • 2 tsp rosemary, finely chopped
  • 56.88 gm olive oil
  • 8 lamb loin chops
  • 2 zucchini, sliced diagonally
  • 2 red capsicums, cut into thick strips
  • 250g cherry tomatoes
  • 60g mixed salad leaves, to serve
Instructions:
  • Preheat your grill to medium-high heat. Mix orange juice, vinegar, garlic, rosemary, and half of the oil in a shallow glass or ceramic dish. Add lamb chops and coat them with the marinade. Let it sit for 10 minutes to marinate.
  • Combine the vegetables and remaining oil in a bowl and sauté until tender and browned, about 8 minutes. Transfer to a plate.
  • Grill lamb chops for 3 minutes on each side until medium or cooked to your liking. Season the chops and serve with grilled zucchini, 8 red capsicums, 9 cherry tomatoes, and fresh salad leaves.
