Elevate lamb chops with fragrant rosemary-garlic marinade, sear to perfection for a delicious meal. Perfect for date night or entertaining guests.
Ingredients:
  • 1 pound lamb rib chops
  • 2 tablespoons minced fresh rosemary
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 1 garlic clove, minced
  • 4 tablespoons extra virgin olive oil, divided
Instructions:
  • Prepare the lamb chops marinade by mixing rosemary, salt, pepper, garlic, and 2 tablespoons of olive oil in a bowl. Massage the mixture onto the lamb chops, ensuring it’s well coated. For double rib chops, let them sit at room temperature for 30 to 45 minutes. For single rib chops cooked rare, marinate in the refrigerator to avoid overcooking the thin ribs during searing. Refrigerate for up to 24 hours or allow double rib chops to reach room temperature for 30 to 40 minutes before cooking.
  • Sear the lamb chops in 2 tablespoons of olive oil in a hot oven-proof sauté pan, rotating to sear each side for 2-3 minutes for double rib chops or for about 1 minute on two sides for single rib chops for a rare or medium rare result.
  • To test doneness of lamb chops, if you prefer rare, they are likely done. For more cooking, transfer them to a 400°F oven for 3 to 5 minutes, or keep them in the pan on low heat, covered, for a few minutes. Note: rib chops cook quickly, making a thermometer impractical; use the finger test. If preferred, thicker chops can be checked with an instant-read thermometer: 125°F for rare, 135°F for medium-rare, and 140°F for medium.
