Dill fish with wedges

Elevate your fish and potato wedges with spicy Cajun seasoning and a hint of dill for a truly flavorful dinner.
Ingredients:
  • 4 large sebago potatoes, peeled and cut into wedges
  • Olive oil spray
  • Cajun seasoning, to sprinkle
  • 40g plain flour
  • 40.00 ml chopped fresh dill
  • 4 (about 200g each) flake fish fillets
  • lite tartare sauce, to serve
  • Lemon wedges, to serve
Instructions:
  • Preheat the oven to 200°C. In a large bowl, coat the potato with olive oil spray and Cajun seasoning until well coated. Spread on a baking tray and bake for 30 minutes.
  • Combine flour and dill on a plate. Coat both sides of the fish lightly with the mixture. Heat a non-stick frying pan over medium-high heat. Spray fish with oil and cook for 3-4 minutes each side, or until cooked through.
  • Plate the fish alongside the crispy wedges, tangy tartare sauce, and fresh lemon wedges for a perfect presentation.
