Grilled fish with dill and lemon in convenient foil packet for a mess-free cooking experience on the grill.
Ingredients:
  • cooking spray
  • 2 pounds haddock fillets, each cut into thirds
  • 6 tablespoons butter, melted
  • 1 limes, juiced (with pulp)
  • 1 tablespoon dried dill weed
  • 1 teaspoon kosher salt
  • 1 teaspoon red pepper flakes
  • 1 onion, sliced crosswise 1/8-inch thick
Instructions:
  • Prepare the grill by preheating it to medium heat and greasing the grate lightly with oil.
  • Place 4 sheets of 8x10-inch aluminum foil on a flat surface and coat with cooking spray.
  • Place an equal portion of haddock in the center of each foil square.
  • Combine butter, lime juice, dill, kosher salt, and red pepper flakes in a small bowl, then drizzle evenly over each portion of fish. Finish by topping each portion with onion slices.
  • Seal the foil tightly around the fish by bringing the ends together and rolling them towards the fish.
  • Grill the packets until the fish easily flakes with a fork, 5 to 7 minutes on each side.
