Deliciously moist sausage rolls with flaky pastry and a spicy kick in the sauce.
Ingredients:
  • 250.00 ml thinly sliced green cabbage
  • 125.00 ml coarsely grated carrot
  • 3.60 gm salt
  • 500g pork mince
  • 2 garlic cloves, finely grated
  • 62.50 ml thinly sliced green shallots
  • 62.50 ml finely chopped water chestnuts
  • 21.00 gm soy sauce
  • 2.50 gm cornflour
  • 1 tsp sesame oil
  • 1/4 tsp white pepper
  • 2 sheets frozen puff pastry, just thawed
  • 2 egg yolks, lightly whisked
  • Sesame seeds, to sprinkle (optional)
  • 42.00 gm soy sauce
  • 20.00 ml white vinegar
  • 1 long fresh red chilli, thinly sliced
Instructions:
  • In a large bowl, combine the cabbage and carrot. Sprinkle with salt and mix well. Let it sit for 10 minutes.
  • Prepare the dipping sauce by mixing together all ingredients in a small bowl, then set it aside.
  • Start by preheating your oven to 220°C/200°C fan forced. Then, line a large baking tray with non-stick baking paper. Squeeze out excess liquid from the cabbage mixture using your hands, then transfer it to a large bowl. Add in the pork, garlic, shallot, water chestnuts, soy sauce, cornflour, sesame oil, and white pepper. Mix everything together until well combined.
  • Cut the pastry sheet in half lengthwise. Add a quarter of the pork mixture down the center of each pastry strip. Roll up the pastry to make a log, then place seam-side down. Cut each log into 5 pieces and place on the tray. Brush with egg yolk and sprinkle with sesame seeds (if using). Chill in the fridge for 15 minutes.
  • Bake the sausage rolls until cooked through and pastry is puffed and golden, for about 15-20 minutes. Serve with the dipping sauce.
