Make delicious egg, cheese, and sausage sandwiches using a donut pan.
Ingredients:
  • 10 large eggs
  • salt and freshly ground black pepper to taste
  • 6 ounces cooked breakfast sausage
  • 3 tablespoons fresh chives, chopped
  • 6 mini bagels
  • 6 slices Cheddar cheese
  • Sriracha sauce or hot sauce (optional)
Instructions:
  • - Preheat your oven to a toasty 300 degrees F (150 degrees C) and give your 6-cavity donut pan a light spray with cooking oil.
  • In a large bowl, vigorously whisk eggs until smooth and free of any visible egg whites. Stir in salt and pepper. Evenly distribute the egg mixture among the 6 cavities of the donut pan.
  • Place in the heated oven and bake until the egg rounds are firm and risen, for about 10 to 12 minutes.
  • Split bagels and lay them on a baking sheet. Add cheese on one half of each bagel. Bake until golden brown and cheese is melted, about 4 to 5 minutes.
  • Carefully loosen the egg rounds from the donut pan using a knife, then place one on each bagel half. Add hot sauce for extra flavor, if preferred. Serve promptly.
