Cheesy chicken lasagna soup with broccoli, 2 types of Cheddar cheese.
Ingredients:
  • 2 tablespoons salted butter
  • 2 medium carrots, cut into matchsticks
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • 1 small head broccoli, cut into florets
  • 0.5 cup chicken broth
  • 1 rotisserie chicken
  • 4 tablespoons salted butter
  • 4 tablespoons all-purpose flour
  • 3 cups 1% milk
  • 1 cup shredded white Cheddar cheese
  • 2 teaspoons garlic salt
  • 2 cups shredded Cheddar cheese
  • 1 (8 ounce) package oven-ready lasagna noodles
  • 3 tablespoons panko bread crumbs
Instructions:
  • In a large skillet over medium-high heat, melt the butter until sizzling. Saute the carrots and onion for approximately 4 minutes, then add the garlic in the final moments to release its aromatic flavors without charring.
  • Microwave broccoli with chicken broth until tender, about 3 minutes. Discard excess broth, coarsely chop the broccoli, and mix it with the carrots. Set aside.
  • Peel the skin off the rotisserie chicken and use a sharp knife to delicately break it apart. Cut the meat into small cubes, ensuring to remove any bones.
  • In a heavy saucepan over medium heat, melt butter and whisk in flour to create a smooth paste. Gradually pour in milk while stirring continuously. Cook until the sauce thickens, about 7 minutes. Stir in white Cheddar cheese and garlic salt until melted and combined.
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • - Reserve 1/2 cup of Cheddar cheese for the topping. - Spread 1/2 cup of sauce on the bottom of an 8x8-inch casserole dish. - Layer lasagna noodles, broccoli mixture, cheese, and chicken. - Repeat the layers, finishing with sauce. - Sprinkle the reserved Cheddar cheese and panko bread crumbs on top.
  • Cover the lasagna with foil, bake in the preheated oven for 35 minutes, then uncover and bake for an additional 5 minutes. Let it rest for 7 minutes before serving.
