Low-fat, budget-friendly winter favorite soup. Double the recipe and top with cheddar. Can be made in a slow cooker for convenience.
Ingredients:
  • 0.5 cup red or green lentils
  • 1 cup chopped onion
  • 1 stalk celery, chopped
  • 2 cups shredded cabbage
  • 1 (28 ounce) can whole peeled tomatoes, chopped
  • 2 cups chicken broth
  • 3 carrots, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon white sugar
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon curry powder
Instructions:
  • In a large pot, immerse the lentils in water twice their height. Bring to a boil, reduce heat, and simmer for 15 minutes. Drain, rinse, and place back in the pot.
  • Combine onion, celery, cabbage, tomatoes, chicken broth, carrots, and garlic in the pot. Season generously with salt, pepper, sugar, basil, thyme, and curry. Simmer for 1 1/2 to 2 hours until vegetables reach desired tenderness.
