Ingredients:
  • 9.20 gm olive oil
  • 1 red onion, chopped
  • 2 garlic cloves, crushed
  • 2 celery stalks, chopped
  • 10.00 gm mild Indian curry powder
  • 400g can diced tomatoes
  • 1 litre vegetable liquid stock
  • 125.00 ml dried green lentils, washed, drained
  • 2 red capsicums, chopped
  • 230g eggplant
  • Plain yoghurt, to serve
  • Coriander leaves, to serve
Instructions:
  • In a large saucepan over high heat, heat oil. Add onion, garlic, and celery and cook for 5 minutes until the onion is soft. Stir in curry powder and cook for an additional minute until fragrant.
  • Combine tomato, stock, 2 cups of cold water, and lentils in a pot. Cover and bring to a boil. Reduce heat and simmer for 45 minutes. Stir in capsicum and eggplant. Simmer covered for another 40 minutes until vegetables and lentils are tender. Season with pepper and serve the soup with yoghurt and coriander.
