Impress guests with double chocolate banana bread drizzled in cookies and cream icing.
Ingredients:
  • 220g brown sugar
  • 260g self-raising flour
  • 25g cocoa powder
  • 65g chocolate chips
  • 125ml buttermilk
  • 150g melted butter
  • 2 Free Range Eggs
  • 2 mashed large ripe bananas
  • 125g softened butter
  • 240g icing sugar mixture
  • 20.60 gm milk
  • 80g melted white chocolate
  • Oreo Original biscuits, crushed
Instructions:
  • Combine the brown sugar, self-raising flour, cocoa powder, and dark chocolate chips in a large bowl.
  • In a medium bowl, combine buttermilk, melted butter, eggs, and mashed bananas. Incorporate this mixture into the flour mixture and stir until well mixed.
  • Transfer the banana mixture into a greased and lined 10cm x 22cm loaf pan, ensuring the surface is smoothed. Bake at 180C for 50 minutes to 1 hour or until a skewer inserted in the center comes out clean. Allow it to cool in the pan for 5 minutes before turning it onto a wire rack to completely cool.
  • In a bowl, use an electric mixer to cream the butter until very pale. Gradually add the icing sugar mixture, beating well after each addition. Then mix in the milk and melted white chocolate until well combined. Spread the frosting over the cooled banana bread and sprinkle with crushed Oreo Original biscuits.
