Indulgent Double Chocolate Chip Cookies: Crispy outside, chewy inside, bursting with rich chocolate flavor.
Ingredients:
  • 1 1/4 cups (150g) all-purpose flour
  • 1/2 cup (50g) natural cocoa powder (not Dutch-process)
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, at room temperature
  • 1/2 cup (100g) sugar
  • 1/2 cup (100g) light brown sugar, packed
  • 1 large egg plus 1 large egg yolk, at room temperature
  • 1 cup (170g) semi-sweet chocolate chips
Instructions:
  • In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined. Set aside.
  • Combine the butter and sugars in a large bowl until just mixed. Alternatively, use a stand mixer with a paddle attachment.
  • Combine eggs and vanilla: Mix the egg, egg yolk, and vanilla with the butter mixture until fully incorporated, scraping down the sides of the bowl as needed for thorough mixing.
  • Combine the flour mixture with the butter mixture, using a rubber spatula to fold until a smooth dough forms. If using a stand mixer, mix on low speed until just combined.
  • Incorporate the chocolate chips: Scrape the sides of the bowl, then add and mix the dough until the chocolate chips are evenly spread throughout.
  • Form 1-tablespoon dough balls: Roll the dough into balls and place on a large plate. If the dough is too soft, chill it for 15 minutes. For best results, refrigerate the balls covered with plastic wrap for at least 1 hour, up to 48 hours. Skipping this step may result in thinner, less chewy cookies.
  • Preheat your oven to 350°F while the dough chills for the remaining 15 minutes. Line a large baking sheet with parchment paper.
  • Bake the cookies: Spread them out on the baking sheet about 4 inches apart. You may need to bake in batches. Bake for 12 minutes.
  • Cool and serve: Allow the cookies to cool on the baking sheet for 5 to 10 minutes before indulging in their deliciousness!
