Double-baked cheese souffles

Create a gourmet cheese souffle for a special occasion.
Ingredients:
  • Melted butter, to grease
  • 40g butter
  • 40g (1/4 cup) plain flour
  • 1/2 tsp mustard powder
  • 185ml (3/4 cup) milk
  • 105g (1 1/4 cups) coarsely grated cheddar
  • 3 eggs, separated
  • 125ml (1/2 cup) thin cream
  • Salt & freshly ground black pepper
  • Mixed salad leaves, to serve
Instructions:
  • Preheat the oven to 180°C and generously brush four 185ml (3/4-cup) ovenproof ramekins with melted butter.
  • In a saucepan, melt butter until foamy. Stir in flour and mustard powder, cooking for 2 minutes until mixture bubbles. Remove from heat and gradually whisk in half the milk until smooth. Add the rest of the milk and whisk until combined. Return to heat, stirring until thickened for 3-4 minutes. Remove from heat and stir in 65g (3/4 cup) cheddar and egg yolks until smooth.
  • Beat egg whites using an electric beater until firm peaks form in a clean, dry bowl. Gently fold in a quarter of the egg white to the cheddar mixture using a large metal spoon until just combined, then repeat with the remaining egg white.
  • Distribute mixture evenly into ramekins and place in a roasting pan. Fill the pan halfway up the sides of the ramekins with boiling water. Bake in the preheated oven for 15 minutes or until set. Take out of the oven.
  • Preheat oven to 220°C. Carefully loosen souffles from ramekins using a small knife and transfer them onto ovenproof plates. Top with remaining cheddar. Season cream with salt and pepper, then drizzle it over the souffles. Bake for 10 minutes until golden brown, then serve hot with a side salad.
