Double cheese sweet potato bake recipe

Cheesy twice-baked potatoes with two types of cheese for double the flavor.
Ingredients:
  • 500g desiree potatoes, thinly sliced
  • 500g orange sweet potatoes, thinly sliced
  • 1 bunch fresh sage
  • 1 large eschalot, finely chopped
  • 2 garlic cloves, finely chopped
  • 100g goat’s cheese, crumbled
  • 250.00 ml grated cheddar
  • 375.00 ml light thickened cream for cooking
  • 20.00 ml chopped pecans
Instructions:
  • Preheat your oven to 200C/180C fan-forced and grease a 6-cup-capacity oval baking dish.
  • Layer half of the potatoes and sweet potatoes in a slightly overlapping pattern in the prepared dish. Tear and sprinkle half of the sage over the potatoes, followed by half of the eschalot, half of the garlic, and half of the cheeses. Drizzle with half of the cream and season with salt and pepper. Repeat with the remaining potatoes and sweet potatoes in another layer. Drizzle with the rest of the cream, sprinkle the remaining eschalot, garlic, and cheeses on top, and season with salt and pepper. Cover tightly with foil and bake for 40 minutes.
  • Uncover and bake for an additional 25 minutes until golden and tender. Sprinkle with pecans and the remaining sage leaves, then bake for another 5 minutes until the sage is crisp. Let it stand for 10 minutes before serving.
