Double-choc marble swirl brownies

Decadent brownies with a melt-in-your-mouth texture from a blend of two types of chocolate chips.
Ingredients:
  • 250g butter
  • 430g (2 cups) caster sugar
  • 4 eggs
  • 225g (1 1/2 cups) plain flour
  • 4.40 gm vanilla essence
  • 100g Dark Chocolate Bits
  • 35g (1/3 cup) cocoa powder
  • 100g White Chocolate Bits
Instructions:
  • Preheat the oven to 180ºC and line a 20 x 30cm slab pan with non-stick baking paper.
  • In a saucepan over medium heat, melt the butter until glossy. Remove from heat and whisk in sugar. Add eggs one at a time, stirring until the mixture thickens and becomes glossy.
  • Gently sprinkle the flour over the egg mixture and mix until fully incorporated. Add the vanilla and divide the batter evenly into 2 bowls.
  • Combine dark chocolate bits with sifted cocoa powder until well mixed. Stir white chocolate bits into the remaining mixture. Spoon the dark and white chocolate mixtures alternately over the prepared pan base. Swirl with a knife for a marbled effect.
  • Bake for 30 minutes or until a skewer inserted in the center comes out clean. Allow it to cool in the pan. Cut into pieces and sprinkle with icing sugar.
