Indulge in a delectable blend of pasta and squash coated in rich flavors of Parmesan, herbs, and reduced-calorie margarine for a mouthwatering side dish.
Ingredients:
  • 1 medium spaghetti squash (3 pounds)
  • 4 ounces uncooked spaghetti, broken in half
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons reduced-calorie margarine, melted
  • 1 tablespoon fresh oregano leaves or 1 teaspoon dried oregano leaves
  • 1/2 teaspoon garlic salt
Instructions:
  • Preheat oven to 400°F. Use a fork to pierce the squash, then place it in an ungreased 8x8x2 inch square baking dish. Bake uncovered for approximately 1 hour and 30 minutes, or until the squash is tender.
  • Prepare spaghetti according to package instructions. Drain cooked spaghetti.
  • Cut the squash in half lengthwise, discard the seeds and fibers from one half. Use two forks to scrape out the spaghetti-like strands. Toss the strands with the rest of the ingredients, then place the mixture back into the squash shell for serving.
