Southern delicacy: Chitterlings (pig intestines) paired with greens, vinegar, and hot sauce - a beloved dish in many households.
Ingredients:
  • 10 pounds frozen chitterlings, thawed and cleaned
  • 1 onion, roughly chopped
  • 2 teaspoons salt
  • 1 teaspoon minced garlic
  • 1 teaspoon crushed red pepper flakes
Instructions:
  • In a 6-quart pot, add cleaned chitterlings and cover with cold water. Bring to a boil, then add onion, salt, garlic, and red pepper flakes. Simmer for 3 to 4 hours until chitterlings turn clear to white and reach desired tenderness.
