Delicious baked casserole with corned beef hash, eggs, cheese, and country gravy on biscuit base.
Ingredients:
  • Non-stick cooking spray
  • 1 (16 ounce) can refrigerated biscuit dough
  • 1 cup shredded Cheddar cheese, divided
  • 6 eggs
  • 4 teaspoons salt
  • 1 (15 ounce) can HORMEL® Mary Kitchen® Corned Beef Hash
  • 4 cups prepared country-style gravy
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat a 9x13-inch baking pan with non-stick cooking spray.
  • Cut biscuits into quarters and layer them at the bottom of a baking pan. Bake until slightly cooked, around 5 minutes. Sprinkle 1/3 cup of shredded Cheddar cheese on top.
  • Combine eggs, milk, salt, and black pepper in a mixing bowl and whisk until smooth.
  • Heat a non-stick skillet over medium to medium-high heat. Add the corned beef hash and cook, stirring occasionally, until hot and slightly crispy, for 5 to 8 minutes. Remove from heat, pour in the egg mixture, and stir continuously until eggs begin to cook but are still slightly runny, about 30 seconds.
  • Evenly coat biscuits with egg and hash mixture. Sprinkle with remaining Cheddar cheese and top with prepared country gravy. Bake for about 45 minutes until fully cooked.
