Southern-style pinto beans cooked with pork jowl for a tender and flavorful side dish.
Ingredients:
  • 2 cups dried pinto beans
  • 4 quarts water, or more as needed
  • 4 (1 ounce) slices pork jowl, or more to taste
  • 2 tablespoons white sugar
  • salt and ground black pepper to taste
Instructions:
  • Thoroughly rinse pinto beans and place them in a large stockpot. Combine with 4 quarts of water, pork jowl, sugar, salt, and pepper. Bring to a vigorous boil over high heat, then lower heat to a gentle simmer. Cook until beans are tender and flavorful, about 3 to 4 hours. Add water as necessary during cooking to prevent beans from drying out.
