Down under christmas cake

Indulgent fruitcake for your special occasions.
Ingredients:
  • 200g brazil nuts
  • 150g macadamia
  • 250g pitted dates, halved
  • 200g glace cherries
  • 100g raisins
  • 100g dried mixed peel
  • Finely grated zest of 1 lemon
  • 100g plain flour
  • 4.00 gm baking powder
  • 4.40 gm vanilla extract
  • 150g caster sugar
  • 3 eggs
  • 40.00 ml brandy
  • 110g apricot jam
  • 200g mixed glace fruits (such as apricots, cherries and pears)
Instructions:
  • Preheat your oven to 150°C while you prepare a 20cm springform cake pan by lining the base and sides.
  • Combine nuts, dried fruits, peel, and zest in a bowl. Sift in flour, baking powder, and 1 teaspoon salt, then mix in sugar. Lightly whisk eggs with vanilla, and fold into the cake batter until fully incorporated. Transfer the mixture to a pan and bake for 1 hour 30 minutes, or until a skewer inserted in the center comes out clean.
  • Allow cake to cool in the pan for 15 minutes. Invert onto a rack set over a plate, remove baking paper, and pierce all over with a skewer. Drizzle with brandy, wrap tightly in foil, and let it rest in a cool, dry place for 2-3 days to 'mature'.
  • Just before serving, gently warm the jam in a pan over low heat or in the microwave until it becomes runny. Place the glace fruits on top of the cake in a decorative pattern and brush them with the warm jam to secure in place.
