Dragon Fruit Cake

Make a stunning dragon fruit cake with bold flavors from fresh dragon fruit in both the batter and frosting.
Ingredients:
  • 1 dragon fruit, peeled and cubed
  • 1.5 cups cake flour
  • 1.5 cups all-purpose flour
  • 1.5 cups white sugar
  • 0.75 tablespoon salt
  • 1 cup butter, softened
  • 1 teaspoon almond extract
  • 2 tablespoons simple syrup, or to taste
  • 4 ounces cream cheese, softened
  • 2 tablespoons butter, softened
  • 1.75 cups sifted confectioners' sugar
  • 1 (16 ounce) package vanilla buttercream frosting
Instructions:
  • Blend the vibrant dragon fruit flesh until smooth, then transfer the luscious purée to a bowl for later use.
  • Preheat the oven to 325°F (165°C) and prepare two 8-inch cake pans by greasing and flouring them.
  • Combine cake flour, all-purpose flour, 1 1/2 cups sugar, baking powder, and salt, sifting them together in a bowl.
  • In a large bowl, cream together 1 1/2 cups of sugar and 1 cup of butter until light and fluffy. Then, add the eggs one at a time, beating until the yolks are fully incorporated.
  • Mix together the milk, vanilla extract, and almond extract in a cup, then set aside.
  • Mix half of the flour mixture into the creamed butter until just combined. Pour in half of the milk mixture. Gently mix in the rest of the flour mixture, followed by the remaining milk mixture. Stir in the dragon fruit purée with a light swirl to incorporate into the cake batter completely.
  • Distribute batter evenly among the cake pans that have been prepared.
  • Bake until a toothpick inserted in the center comes out clean, approximately 35 minutes in the preheated oven.
  • Allow the cakes to cool in the pans for 10 minutes. Then, invert them onto wax-paper lined racks and let them cool for an additional 5 minutes. Finally, brush the tops and sides of the cakes with simple syrup.
  • Once the cakes have cooled completely, combine cream cheese and butter in a bowl and mix until smooth. Gradually add confectioners' sugar and continue beating for 3 minutes. Incorporate vanilla and 2 tablespoons of dragon fruit purée, mixing until well combined.
  • Place one cake layer top-side up on a serving plate with strips of waxed paper under the edges for a clean finish. Spread half of the vanilla buttercream frosting on top. Add the second layer, bottom-side up, and lightly frost the top and sides with the remaining vanilla buttercream frosting.
  • Smooth dragon fruit cream cheese icing over the top and sides of the cake, allowing hints of vanilla buttercream frosting to peek through.
