Dried Apricot Jam

Transform dried apricots with a touch of vanilla into year-round apricot jam - a delightful and vibrant gift for all.
Ingredients:
  • 4.5 cups dried apricots
  • 4.5 cups boiling water
  • 1 teaspoon vanilla extract
  • 1 (1.75 ounce) package powdered fruit pectin
  • 7 cups white sugar
  • 0.25 cup lemon juice
Instructions:
  • Hydrate apricots in a bowl of boiling water for 30 minutes. Blend soaked apricots, water, and vanilla extract in batches in a food processor until smooth with a hint of texture.
  • In a large pot over medium heat, combine the apricot mixture with pectin and cook until it just starts to boil. Then, stir in sugar and lemon juice and continue to boil for 1 to 2 minutes until the sugar has dissolved.
  • Place jars and lids in boiling water for 5 minutes to sterilize. Fill hot, sterilized jars with apricot jam, leaving 1/4 inch of space at the top. Use a knife or thin spatula to remove air bubbles. Clean rims with a moist paper towel to remove residue. Seal with lids and rings.
  • Fill a large stockpot halfway with water and bring to a boil. Carefully lower the jars onto a rack in the pot with a holder, leaving a 2-inch space between them. Ensure the water level is at least 1 inch above the tops of the jars by adding more boiling water if needed. Cover the pot, bring the water to a full boil, and process for 10 minutes.
  • Place the jars on a cloth-covered or wood surface, ensuring they are several inches apart. Let them cool for about 1 hour. Once cool, check the seal by pressing the top of each lid with your finger to ensure it doesn't move. Store in a cool, dark area.
