Deliciously sweet and spicy homemade jam.
Ingredients:
  • 1kg dried apricots
  • 2 cinnamon sticks
  • 3 cloves
  • 6 cardamom pods
  • 1.25kg caster sugar
  • 60ml (1/4 cup) lemon juice
Instructions:
  • In a spacious bowl, immerse apricots in 2 liters of water and let them soak overnight.
  • Securely tie the spices in a piece of muslin using kitchen string.
  • Combine apricots and soaking liquid with spices in a large pan and bring to a boil. Simmer over low heat for 15 minutes. Stir in sugar and lemon juice, then bring the mixture back to a gentle boil. Skim off any scum that forms on the surface with a slotted spoon.
  • After 25 minutes, check for doneness by spooning a bit onto a cold plate and pushing the mixture with your finger. If wrinkles form and a skin develops, it's ready; if not, chill the plate again and return the mixture to the freezer.
  • Simmer jam for 10 minutes, then test consistency. Repeat until jam sets. Discard spice bag and pour jam into sterilized jars.
