Indulgent cherry bread with yogurt, oats, and white chocolate chips for a rich and sweet treat!
Ingredients:
  • 0.5 cup dried cherries
  • 2 eggs
  • 0.75 cup white sugar
  • 0.5 cup vegetable oil
  • 0.25 cup melted butter, cooled
  • 0.25 cup buttermilk
  • 1 (6 ounce) container cherry vanilla-flavored yogurt
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 cup instant oatmeal
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup white chocolate baking chips, lightly dusted with flour
Instructions:
  • Place dried cherries in a bowl and cover with boiling water. Allow them to sit for 15 minutes to plump up. Then, drain the cherries.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), then generously grease and flour a 9x5-inch loaf pan.
  • In a bowl, gently beat eggs. Mix in sugar, oil, butter, buttermilk, yogurt, and vanilla extract. Whisk until smooth.
  • In a bigger bowl, whisk together flour, oatmeal, baking powder, baking soda, and salt until combined. Add the egg mixture, white chocolate chips, and cherries, stirring until just combined. Be careful not to overmix. Transfer the batter into the loaf pan.
  • Bake in the preheated oven for 45 minutes to 1 hour, or until a toothpick inserted in the center comes out clean. Check at 35 minutes for oven variations. If the bread starts to brown too much, lightly cover with foil. Let cool in the pan for 5 to 10 minutes before transferring to a wire rack to cool completely.
