Indulge in a decadent cherry almond sweet bread loaf.
Ingredients:
  • 1 1/2 cups boiling water
  • 2 bags (5 oz each) dried cherries
  • 1 cup packed brown sugar
  • 1/2 cup butter or margarine, softened
  • 2 eggs
  • 1/2 teaspoon almond extract
  • 1 3/4 cups Gold Medal™ all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 cups slivered almonds
  • 1/2 cup powdered sugar
  • 1/4 teaspoon almond extract
  • 1 to 2 teaspoons milk
Instructions:
  • Place cherries in a medium bowl and cover with boiling water; allow to sit for 20 minutes. Drain the cherries. Preheat the oven to 325°F and generously spray a 9x5-inch loaf pan with baking spray that includes flour.
  • In a large bowl, use an electric mixer to blend brown sugar and softened butter until smooth. Add eggs and 1/2 teaspoon almond extract, mix until smooth. Gently fold in flour, baking powder, and salt until just combined. Mix in almonds and cherries until evenly distributed; the batter will be thick. Transfer the batter into the pan.
  • Bake for 60-70 minutes until a toothpick inserted in the center comes out clean and the top is a beautiful dark golden brown. Let it cool for 10 minutes on a rack, then gently loosen the sides of the loaf from the pan, remove it and place it top side up on a rack. Cool completely for about 1 hour before serving.
  • In a small bowl, combine glaze ingredients until velvety consistency. Pour over cooled bread. Wrap snugly and keep at room temperature. Slice loaf into 12 thick pieces, then halve each slice.
