Effortless scones that skip the kneading and rolling - simply drop spoonfuls of dough onto the pan for a stress-free treat.
Ingredients:
  • 1/4 cup sugar
  • 2 teaspoons grated lemon peel
  • 1 1/2 teaspoons cream of tartar
  • 1/4 teaspoon salt
  • 1/2 cup firm butter or margarine, cut into 8 pieces
  • 1/3 to 1/2 cup buttermilk
  • 1/2 cup dried cherries
  • About 1 tablespoon milk
Instructions:
  • Preheat the oven to 425°F. In a medium bowl, combine flour, sugar, lemon peel, cream of tartar, baking soda, and salt. Use a pastry blender or two knives to cut in the butter until the mixture resembles fine crumbs. Mix in just enough buttermilk for the dough to come together and form a ball, then gently fold in the cherries.
  • Drop dough by generous 1/3 cupfuls onto ungreased cookie sheet, spacing them about 1 inch apart. Brush the tops with milk and sprinkle with extra sugar for added sweetness, if desired.
  • Bake for 10 to 15 minutes until golden brown, then promptly transfer from baking sheet. Enjoy either warm or cooled.
