Classic Dublin stew featuring flavorful Irish sausage and bacon.
Ingredients:
  • 1 pound Irish sausages
  • 1 pound bacon
  • 1 pound potatoes, peeled and cut into large dice
  • 2 large onions, roughly chopped
  • 6 carrots, roughly chopped
  • 1 quart chicken stock
  • 1 quart whole milk
  • salt and pepper to taste
Instructions:
  • Place a large Dutch oven over medium-high heat. Cook sausages and bacon until bacon is crisp. Drain fat from the pan, saving 1 tablespoon of drippings. Crumble bacon and halve sausages.
  • In the Dutch oven, warm the reserved drippings with crumbled bacon and sausages over low heat. Add onions and carrots; sauté until onions soften, about 7 to 10 minutes. Pour in stock and milk; simmer until potatoes are fork tender, around 30 to 45 minutes. Season with salt and pepper before serving.
