Decadent chocolate cake infused with Irish cream filling and topped with a rich whiskey glaze.
Ingredients:
  • 1 tablespoon unsweetened cocoa powder
  • 2 (8 ounce) packages cream cheese, softened
  • 0.25 cup confectioners' sugar
  • 6 tablespoons Irish cream liqueur
  • 1 (18.25 ounce) package chocolate cake mix without pudding
  • 1 (3.9 ounce) package instant chocolate pudding mix
  • 3 eggs
  • 0.5 cup vegetable oil
  • 1 (12 fluid ounce) can or bottle Irish stout beer (such as Guinness®)
  • 2 tablespoons butter
  • 1 cup white sugar
  • 0.5 cup Irish whiskey
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Prepare a 10-inch fluted tube pan (like a Bundt®) by greasing it and dusting the inside with unsweetened cocoa powder.
  • Whip together cream cheese, confectioners' sugar, 1 egg, and Irish cream liqueur until velvety and well combined. Keep aside.
  • Combine chocolate cake mix, chocolate pudding mix, 3 eggs, and vegetable oil in a separate bowl until batter is thick and smooth. Gently mix in the Irish stout beer.
  • Gently layer 1/3 of the cake batter into the prepared pan, followed by the luscious Irish cream filling. Cover with the remaining cake batter.
  • Bake in the preheated oven for 40 to 50 minutes until a toothpick comes out clean when inserted into the cake.
  • Use a thin spatula to gently loosen the edges of the cake from the pan. Allow the cake to rest in the pan for 15 minutes. Then, invert the pan over a wire rack to release the cake and let it cool completely on the rack.
  • As the cake cools, gently melt butter in a saucepan on medium heat, then blend in white sugar and Irish whiskey. Let it come to a gentle boil, stirring until sugar dissolves, then lower the heat and simmer until thickened for approximately 10 minutes.
  • Place the cake on a beautiful serving platter. Brush the decadent whiskey glaze generously over the cooled cake, ensuring it soaks in beautifully by repeating the process several times.
