Delicious Dublin coddle with smoked bacon, sausages, onions, and potatoes - a family favorite from Ireland.
Ingredients:
  • 0.5 pound smoked streaky bacon
  • 1 pound good-quality sausages
  • 1 onion, thickly sliced
  • 8 large potatoes, peeled and quartered
  • water to cover
  • 1 tablespoon chopped parsley, or to taste
Instructions:
  • In a large skillet over medium-high heat, crisp up bacon until evenly browned, about 10 minutes. Blot on paper towels, keeping the flavorful grease in the skillet. Coarsely chop bacon into chunks and add to a large pot.
  • Sear sausages in the skillet in the flavorful bacon grease until golden brown, turning occasionally, for approximately 5 minutes. Move to the pot.
  • Sauté the onion in the skillet until softened, around 5 minutes, then transfer to the pot.
  • Layer the potatoes on top of the onions in the pot, ensuring they are evenly spread out. Add just enough water to fully cover the potatoes. Place the lid on the pot and let it come to a boil. Once boiling, lower the heat to the lowest setting and gently simmer for 60 to 90 minutes until the potatoes are tender. Finish by garnishing with fresh parsley before serving.
