Indulgent cheesecake popsicle with layers of dulce de leche and cinnamon cereal - perfect for beating the summer heat!
Ingredients:
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup sugar
  • 1/2 cup sour cream
  • 1 cup half-and-half
  • 2/3 cup dulce de leche (caramelized sweetened condensed milk), from 13.4-oz can
  • 2 tablespoons milk
  • 1/2 cup Cinnamon Toast Crunch™ cereal, coarsely crushed
Instructions:
  • In a medium bowl, use an electric mixer to blend cream cheese and sugar until smooth. Mix in sour cream and half-and-half. Fill 8 (5-oz) paper cups with 1/4 cup of the mixture. Cover cups with foil, insert a craft stick into the center of each pop, and freeze for about 2 hours until set. Refrigerate the remaining cream cheese mixture for later use.
  • Combine the dulce de leche and milk in a small bowl. Put 1/3 cup of the dulce de leche mixture in a small resealable plastic bag; refrigerate the rest. Cut a small corner of the bag and drizzle small amounts over the frozen cream cheese layer in each cup. Pour the remaining cream cheese mixture over the dulce de leche layer. Place the foil back on the pops to support the sticks. Freeze for about 4 hours until completely frozen.
  • 30 minutes before serving, take the dulce de leche mixture out of the refrigerator to soften at room temperature. Remove the pops from the freezer and paper cups. Dip the top of each pop into the dulce de leche mixture, then coat with cereal.
