Vanilla-sweetened milk heated into a creamy custard.
Ingredients:
  • 1 gallon milk
  • 1 vanilla bean
  • 4.5 cups white sugar
Instructions:
  • Bring the milk to a boil in a large saucepan over medium-high heat. Strain it through cheesecloth and return it to the pan.
  • 1. Split the vanilla bean in half and scrape the seeds into the milk. Stir in the sugar and return the pan to medium-high heat, stirring continuously until the sugar dissolves. Once the milk mixture starts boiling, mix in the baking soda. Lower the heat to medium, stirring constantly until the mixture thickens. When a wooden spoon dragged through the mixture reveals the bottom of the pan and the mixture turns light brown, take the pan off the heat.
  • Cool the dulce de leche in an ice bath, stirring constantly. Transfer to airtight containers and refrigerate, or pour into sterile jars for storage in the refrigerator.
