Dulce de leche doughnuts

Perfectly fried doughnut with a gooey, sweet filling.
Ingredients:
  • 1 x 7 g sachet dried yeast
  • 75 g golden caster sugar
  • 550 g plain flour plus extra for dusting
  • 320 ml semi-skimmed milk
  • 80 g unsalted butter (at room temperature)
  • 1 litre vegetable oil
  • 200 g dulce de leche
  • 1 teaspoon ground cinnamon
Instructions:
  • In a medium bowl, combine yeast, 1 tablespoon caster sugar, and 1 tablespoon flour. Heat the milk until lukewarm, then pour it over the yeast mixture and stir. Let it sit in a warm place for 10-15 minutes until it begins to bubble. In a large bowl, mix softened butter, remaining sugar, and flour until crumbly. Add the yeast mixture and stir until dough forms. Shape into a ball, knead on a floured surface until smooth, then place in a clean bowl. Cover and let rise in a warm place for 1 hour. Turn out the dough, divide into 12 balls, flatten slightly, and place on baking trays. Let them rise for 45 minutes. Heat oil in a pan until hot. Fry the dough balls until golden brown. Drain on paper towels. Warm dulce de leche, fill a piping bag, and insert into the doughnuts to fill. Roll in cinnamon sugar before serving.
