Irresistible warm chocolate chip cookies with oozing caramel center using dulce de leche for a soft surprise.
Ingredients:
  • 1 can (13.4 oz) dulce de leche (caramelized sweetened condensed milk)*
  • 1 1/2 cups butter, softened
  • 1 1/4 cups granulated sugar
  • 1 1/4 cups packed brown sugar
  • 1 tablespoon vanilla
  • 2 large eggs
  • 4 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 4 cups semisweet chocolate chips
  • 1 cup toasted chopped pecans
Instructions:
  • Prepare a baking sheet lined with waxed paper or foil. Spoon 36 slightly underfilled measuring teaspoon portions of dulce de leche onto the lined sheet. Freeze for 1 hour or until slightly firm (not completely frozen).
  • - Preheat the oven to 350°F. In a large bowl, cream together butter, sugars, vanilla, and eggs until well combined using an electric mixer or spoon. Add flour, baking soda, and salt; mix well. Stir in chocolate chips and pecans using a sturdy wooden spoon until a stiff, chunky dough forms (you may have to use your hands).
  • Drop dough by 1/4 cupfuls or an ice cream scoop onto a parchment-lined cookie sheet, making sure to leave about 3 inches of space between each cookie. Gently press your thumb into the center of each cookie to create a deep indentation without touching the cookie sheet. Add a dollop of dulce de leche into the center of each cookie, and carefully enclose it with the dough. If needed, place dulce de leche dollops back in the freezer if they become too soft to work with.
  • Bake until golden brown with a soft center, which should take 12 to 15 minutes. Let cool for 1 to 2 minutes, then transfer from the baking sheets to cooling racks.
  • To freeze the cookies, follow the recipe until step 3. Place the cookies on a baking sheet and freeze for 1 hour until firm. Transfer the frozen cookie dough balls into a plastic zip-top freezer bag. When you're ready to bake, simply place them on a baking sheet and bake as directed.
