Savory Chinese dumplings, perfect for sharing.
Ingredients:
  • 250g pork mince
  • 2cm piece ginger, grated
  • 1 small egg, beaten
  • 24.40 gm oyster sauce
  • 16 square wonton wrappers (see Notes)
  • 18.40 gm chilli oil (see Notes)
  • 21.00 gm soy sauce
  • 5.00 gm caster sugar
Instructions:
  • Mix together the pork, freshly grated ginger, egg, and savory oyster sauce in a bowl, using your hands to combine everything thoroughly.
  • Place a wonton wrapper on a clean cloth. Spoon a teaspoon of filling in the middle of the wrapper. Moisten the edges with water using your finger and fold it into a triangle. Press firmly to seal. Bring the two corners of the long side together and press to create a neat parcel. Repeat with the rest of the wrappers and filling to make 16 dumplings.
  • Boil the dumplings in two separate batches in a large saucepan of boiling water for 2 minutes or until they float to the surface and are fully cooked (test one for doneness). Drain the dumplings and distribute evenly onto serving plates.
  • Mix together the chili oil, soy sauce, and sugar, then generously pour the delicious mixture over the dumplings. Enjoy them with a side of hot and sour soup.
