Succulent Dutch oven goulash with cavatappi pasta and fresh herbs is a must-try main course.
Ingredients:
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 1 pound lean ground beef
  • 2 teaspoons ground black pepper
  • 1 teaspoon kosher salt
  • 1 (28 ounce) can fire-roasted diced tomatoes
  • 1.5 cups beef broth
  • 3 tablespoons red wine
  • 3 tablespoons sweet paprika
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons chopped fresh thyme
  • 2 teaspoons caraway seeds
  • 1 teaspoon chopped fresh rosemary
  • 2 bay leaves
  • 10 ounces cavatappi pasta
  • 1 medium red bell pepper, chopped
  • 1 teaspoon lemon juice
Instructions:
  • In a Dutch oven, heat oil over medium heat. Sauté onion until translucent, around 5 minutes. Turn up the heat to medium-high. Add ground beef, black pepper, and salt. Cook until meat is browned and crumbly, approximately 10 minutes.
  • Combine tomatoes, beef broth, wine, paprika, garlic, Worcestershire sauce, thyme, caraway seeds, rosemary, and bay leaves in the pot. Simmer over medium heat until the mixture thickens to a stew-like consistency, approximately 45 minutes.
  • Bring a pot of salted water to a lively boil. Cook cavatappi until perfectly al dente, about 9 to 10 minutes, stirring occasionally.
  • Combine the bell pepper and lemon juice with the beef mixture, then simmer for an additional 10 minutes. Toss in the cooked pasta until well coated.
