Flavorful seasoning elevates juicy whole chicken roasted to perfection in a Dutch oven.
Ingredients:
  • 0.25 cup kosher salt
  • 0.25 cup light brown sugar
  • 2 tablespoons garlic powder
  • 2 tablespoons smoked paprika
  • 1 teaspoon ground dried chipotle pepper
  • 1 (4 pound) whole chicken
  • 2 tablespoons salted butter, melted
Instructions:
  • Mix together salt, brown sugar, garlic powder, paprika, and chipotle pepper in a bowl. Then, pat the chicken dry and generously coat it with the seasoning blend, making sure to stuff any remaining seasoning inside the cavity.
  • Let it rest at room temperature for a maximum of 90 minutes.
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Arrange the chicken in the base of a Dutch oven and generously drizzle with melted butter. Cover with the lid to seal in the flavors.
  • Roast in the preheated oven until fully cooked, 2 to 3 hours. Check for doneness with an instant-read thermometer – the temperature near the bone should reach 165 degrees F (74 degrees C). Let it rest, uncovered, for 10 minutes before serving.
  • Serve carved chicken drizzled with pan drippings.
