Delicious Dutch pancakes: thick, fluffy, versatile. Perfect for breakfast or dinner, top with maple syrup, fried apples, or jam.
Ingredients:
  • 6 large eggs
  • 1.75 cups all-purpose flour, or as needed
  • 1.25 cups milk, or more as needed
  • 1 tablespoon white sugar
  • 1 tablespoon vegetable oil
  • 1 tablespoon unsalted butter, or more as needed
Instructions:
  • In a large bowl, vigorously whisk eggs until frothy. Stir in 1 3/4 cups flour until smooth. Gradually whisk in 1 1/4 cups milk, sugar, and oil until well combined. Adjust consistency with more flour or milk as necessary. Allow batter to rest at room temperature for 30 minutes before use.
  • In a small, heavy skillet over medium heat, melt 1 teaspoon of butter. Pour in 1/4 cup pancake batter and swirl to coat the bottom of the pan. Cook until the pancake is almost set on top, for approximately 2 minutes. Flip and continue cooking until golden brown, around 2 minutes. If the pancake curls too much, stir in extra milk to the remaining batter. Stack the pancakes on a plate and continue making more, adding more butter if necessary.
