Fluffy oven-baked German pancakes puff up like sweet Yorkshire puddings.
Ingredients:
  • 20 g butter
  • 2 large free-range eggs
  • 100 ml single cream
  • 120 ml milk
  • 125 ml plain flour
  • 30 g golden caster sugar
  • 1 tablespoon cinnamon
  • 3 plums
  • ½ orange
  • 2 tablespoons golden caster sugar
Instructions:
  • Preheat the oven to 200ºC/gas 6 with a baking sheet inside. Roast the plums by slicing and placing them in a tin, then drizzle with orange juice, sugar, and toss to coat. Roast for 20 minutes until soft. Melt butter in two 15cm iron frying pans until nutty brown. Make pancake batter by whisking eggs, cream, milk, and flour until smooth. Divide batter between pans and bake for 20 minutes until golden. Sprinkle with cinnamon sugar and serve with roasted plums on top.
