Golden Dutch baby pancake topped with yogurt and fresh berries - ideal for a weekend brunch.
Ingredients:
  • 100g (2/3 cup) plain flour
  • 160ml (2/3 cup) milk
  • 3 eggs
  • 55g (1/4 cup) caster sugar
  • 2 tsp finely grated orange rind
  • 125g strawberries, halved
  • 10.00 gm caster sugar
  • 2 tsp rosewater
  • 30g butter
  • 180g (2/3 cup) thick vanilla yoghurt
  • 2 fresh figs, cut into wedges
  • 40.00 ml pomegranate seeds
  • 40.00 ml chopped pistachios
  • Fresh raspberries, to serve
  • Small fresh mint leaves, to serve
Instructions:
  • Preheat the oven to 200C/180C fan forced. In a blender or food processor, combine flour, milk, eggs, sugar, and rind. Blend until smooth, then set aside to rest for 15 minutes.
  • In a bowl, mix together strawberries, sugar, and rosewater. Set aside, giving it an occasional stir, until needed.
  • Preheat a 21cm ovenproof frying pan over medium-high heat. Melt the butter until foaming, swirling to coat the pan. Remove from heat and pour in the batter. Bake for 18 minutes until puffed and golden brown; it will sink once out of the oven.
  • Cover the pancake with the strawberry mixture, yoghurt, figs, pomegranate seeds, pistachios, raspberries, and mint leaves. Cut it into wedges and enjoy while still warm.
