Impress with a fluffy oven-baked berry pancake for four.
Ingredients:
  • 2 tablespoons butter or margarine
  • 2 eggs
  • 1/2 cup Gold Medal™ all-purpose flour
  • 1/2 cup milk
  • 2 cups assorted fresh berries
  • Powdered sugar, if desired
Instructions:
  • Preheat oven to 400°F. Place butter in a 9-inch glass pie plate in the oven to melt. Brush the melted butter evenly over the bottom and sides of the pie plate.
  • In a medium bowl, gently whisk the eggs. Mix in the flour, milk, and salt until just combined (avoid overmixing). Transfer the mixture to a pie plate.
  • Bake for 25 to 30 minutes or until puffy and deep golden brown. Serve the pancake right away, topped with fresh berries and a sprinkle of powdered sugar.
