No-bake Easter dirt cake with instant pudding and cream cheese, a kid-friendly holiday treat.
Ingredients:
  • 14.3 ounces chocolate sandwich cookies (such as Oreo®)
  • 0.25 cup salted butter, melted
  • 0.5 cup salted butter, softened
  • nonstick cooking spray
  • 1 (8 ounce) package cream cheese, softened
  • 1.5 cups powdered sugar, divided
  • 2 (3.4 ounce) packages instant vanilla pudding mix (such as Jell-O®)
  • 3 cups whole milk
  • 1 cup heavy whipping cream
  • 0.25 teaspoon cream of tartar
Instructions:
  • Assemble all ingredients needed for the recipe.
  • Pulse cookies and melted butter in a food processor until finely ground and well-combined. Set aside 1 1/2 cups of the mixture for cake topping.
  • Press the remaining mixture into a lightly greased 9x13-inch baking dish and chill for about 20 minutes while making the filling.
  • In a stand mixer fitted with the paddle attachment, beat softened butter and cream cheese at medium speed until creamy, about 1 to 2 minutes. Gradually add 1 1/4 cups powdered sugar and beat until very creamy, about 1 minute.
  • In a medium bowl, use an electric mixer to beat together pudding mix, milk, and vanilla for 2 minutes until thickened. Then, add this mixture to the cream cheese mixture and beat for another 2 minutes until smooth and well combined.
  • Whisk heavy cream and cream of tartar in a medium bowl with an electric mixer on medium until foamy, around 2 minutes. Slowly add remaining 1/4 cup powdered sugar and mix on medium-high until medium-stiff peaks form in about 5 to 6 minutes. Carefully fold whipped cream into the cream cheese-pudding mixture.
  • Gently dollop the cream cheese-pudding mixture over the chocolate cookie crumb mixture in the baking dish, then use a small off-set spatula to create a smooth layer.
  • Evenly scatter the reserved 1 1/2 cups of chocolate cookie crumb mixture over the top.
  • Chill the cake for at least 4 hours, up to 24 hours. Add your favorite toppings on top of the cake before serving.
