Easter egg hunt brownie recipe

Easter brownies with colorful toppings - a fun and easy treat for kids.
Ingredients:
  • 150g butter, chopped
  • 2 x 200g blocks dark chocolate, roughly chopped
  • 270.00 gm firmly packed brown sugar
  • 3 eggs, lightly beaten
  • 4.40 gm vanilla extract
  • 250.00 ml plain flour
  • 32.50 gm cocoa powder
  • 150g mixed mini Easter eggs, unwrapped
  • 125g packet mini speckled milk chocolate Easter eggs
  • Darrell Lea Mega Minty Moments balls, to decorate
  • Wildberry Skittles, to decorate
  • Mini Starburst Chews lollies, to decorate
  • Bunny marshmallows, to decorate
  • Milk chocolate Easter coins, to decorate
  • Assorted sprinkles, to decorate
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 20cm square cake pan that is 6cm deep, and line the base and sides with baking paper, making sure to extend the paper 2cm above the edge of the pan on all sides.
  • In a medium saucepan over low heat, melt 125g butter with half of the dark chocolate, stirring until combined. Let it sit for 10 minutes. Blend in sugar, eggs, and vanilla. Sift in flour and cocoa, stirring well to combine.
  • Spread the brownie mixture evenly in the prepared pan. Add a layer of chocolate eggs on top, gently pressing them into the batter. Bake for 40 to 45 minutes or until the brownies are just set. Allow them to cool completely in the pan before serving.
  • In a microwave-safe bowl, combine the rest of the dark chocolate and butter. Microwave on MEDIUM (50%), stirring halfway through, until smooth and melted, about 1 minute. Spread the chocolate mixture over the brownie. Decorate with Minty Moments balls, Skittles, chews, marshmallows, coins, and sprinkles. Cut into pieces and serve.
