Easter Egg Truffles recipe

Fun and easy Easter egg truffles, a colorful and sweet treat kids will love. Perfect for gifting, but so delicious you'll want to keep them for yourself!
Ingredients:
  • 600g pkt Green’s Vanilla Mud Cake mix
  • 2 Free Range Eggs
  • 60ml vegetable oil
  • 2 tsp finely grated orange rind
  • 42.00 gm orange juice
  • 400g white choc melts
  • Red, blue, green and yellow liquid food colouring
  • Rainbow sprinkles or confetti, to decorate
Instructions:
  • Preheat your oven to 170°C and prepare a 20cm round cake pan by greasing it and lining the base with baking paper.
  • Follow the packet instructions to make the cake batter by combining the eggs, oil, and ½ cup (125ml) water. Pour the batter into the pan, bake for 45 minutes or until a skewer comes out clean. Cool on a wire rack before serving.
  • Prepare a tray by lining it with baking paper. In a large bowl, crumble the cake and combine it with the icing mix, orange rind, and orange juice. Stir until well mixed. Shape 1-tbsp portions of the mixture into ovals and place them on the lined tray. Freeze for 15 minutes.
  • While waiting, melt the chocolate melts in a heatproof bowl set over a saucepan of simmering water, ensuring the bowl does not touch the water. Stir continuously until fully melted. Then, divide the melted chocolate into 4 separate bowls and color each one pale pink, blue, green, and yellow using food coloring.
  • Take one cake ball and submerge it in the luscious melted pink chocolate, gently shaking off any extra coating. Set it down on a prepared tray. Continue this process with the rest of the cake balls, switching between vibrant colors of chocolate. Finish by decorating with a sprinkle of colorful sprinkles or confetti.
  • Transfer the leftover chocolate into 4 sealable plastic bags and snip off a corner of each bag. Use the bags to drizzle the truffles with chocolate. Allow to set for 10 minutes before serving.
